Des agriculteurs ont alors fait appel en 2001 \u00e0 des chercheurs du d\u00e9partement \u00ab g\u00e9n\u00e9tique et am\u00e9lioration des plantes \u00bb du centre INRA de Montpellier pour acc\u00e9der aux ressources g\u00e9n\u00e9tiques et engager un programme d\u2019\u00e9valuation et de s\u00e9lection vari\u00e9tale en conditions biologiques. Ce programme a \u00e9t\u00e9 men\u00e9 chez et avec les producteurs dans deux territoires majeurs et contrast\u00e9s de la zone traditionnelle de production de bl\u00e9 dur : le Lauragais et la Camargue. Des chercheurs en sciences sociales du d\u00e9partement \u00ab science pour l\u2019action et le d\u00e9veloppement \u00bb de l\u2019INRA se sont mobilis\u00e9s. L\u2019enjeu consistait \u00e0 raisonner une recherche-action, impliquant non seulement les agriculteurs d\u00e8s l\u2019amont de la s\u00e9lection mais l\u2019ensemble des acteurs de la fili\u00e8re (producteurs, collecteurs, transformateurs, consommateurs) de fa\u00e7on \u00e0 prendre en compte les objectifs, les contraintes et les comp\u00e9tences de chacun et \u00e0 partager et d\u00e9battre les hypoth\u00e8ses et m\u00e9thodes au c\u0153ur du projet d\u2019am\u00e9lioration vari\u00e9tale.Le bl\u00e9 dur est rapidement devenu un des mod\u00e8les permettant d\u2019aborder plus largement les contraintes techniques, socio-\u00e9conomiques et juridiques de l\u2019agriculture biologique et d\u2019une s\u00e9lection participative.<\/p>\n<p>Le projet a r\u00e9cemment \u00e9volu\u00e9 pour explorer la question de l\u2019hypersensibilit\u00e9 au gluten.
